Muscle Shoals, Alabama – As many barbecue joints as there are in the Shoals area very few have been operated by the same family for a couple of generations, Brooks Barbecue in Muscle Shoals is one of those that has remained in the same family since it's inception.  They opened their doors in 1965 and have been smoking pork, ribs and chicken ever since then.  It is hard work keeping a family tradition alive and well and the current generation of the Brooks family are following those time honored methods and still turning out savory barbecue.

We don’t know if the current location is where the original location was or not, however, the building is teeming with décor that screams 1970’s.  It is a small unassuming brick over block building just off Second Street in Muscle Shoals that seems to have been constructed just for the selling of barbecue.  You can tell the Brooks family is fairly frugal due to the lack of fancy signs and advertisements.  There is one homemade sign at the corner of Second Street and Union Ave proclaiming “Brooks Barbecue, since 1965” and a sign on the front door.  It’s one of those places like every small town in the South has that if you have to ask where it’s located then folks know “You ain't from around here.”  However, once you do locate it, mark it on your GPS because you’ll want to keep going back for more.

On our visit, we arrived at about 11:45 am on a Friday and there was a steady flow of customers picking up lunch orders to go which appears to be the majority of their business.  However, there is about five tables and ten chairs in a small dining area if you don’t want to take it with you.  As to ambiance, the dining room/ordering counter area is decorated in Golden Flake Potato chip bags with a Coke and Pepsi drink cooler stuck in a corner.  Let’s just say not a whole lot of attention was paid to décor, but then most folks don’t go to a Q-Joint for the décor.

We waited our turn to order and bellied up to the counter where there was one young man taking orders, manning the phone and running to the kitchen to help bag orders to go.  When we ordered he did not ask if we wanted it to go or dine in, so when our food was presented he had it all bagged up.  Didn’t bother us though, we un-bagged it and looked it over and dove right in.  My dining buddy ordered the smoked chicken sandwich which comes with a heaping helping of hot mustard slaw on it.  Along with the barbecue sauce it looks a lot worse than it is, in fact my fellow judge gave it high ratings with the only complaint that the pulled chicken could have used a tad bit more smoke to have made it a hit.  Judge Jim scored it a solid 8 on taste even though the presentation was lacking a bit due to the wrapping. 

As usual, my order consisted of the BBQ plate which came with beans, hot mustard slaw and potato salad.  In our estimate they must have been nearly a ½ lb. of pulled pork on the plate, the pork had a decent smoke ring and was a mixture of inside and outside meat.  The pork tasted fresh and did not have the warmed over juiced up taste that a lot of q-joints try to push off on their customers as fresh barbecue.  Overall, the pork was very tender and lean, juicy and with a light smoke flavor. The meal scored well when it was presented with the sauce in a separate container and not on the meat.  We always suspect q-joints that sauce their meat when it’s plated and wonder what they’re trying to cover up. 

The potato salad was good and appeared to be standard food service mustard potato salad with a little extra punch added.  It was an adequate side item to the pork and while not the best we've ever had, it certainly was head and shoulders above other potato salad we've been served.  The hot mustard slaw on the other hand was juiced up with a good mixture of mayo, mustard and kicked up with some cayenne pepper to give it a bit of a bite.  It paired well with the barbecue and the tangy taste played well with the smokiness of the meat.  

Our biggest disappoint of the meal was the BBQ beans, they were quite appealing on the plate with chunks of pulled pork in them and we just knew they were going to be a hit also. Upon tasting the beans, we were taken aback by the presence of a spice that we just couldn’t wrap our taste buds around.  After several bites, it was decided that the beans was not a contender for the best side of the meal and they were left on the plate.

Overall recommendations:
Pulled pork is a good choice as is the smoked chicken.  The hot mustard slaw is a “Must Try” and the potato salad has enough character that it is a great addition to any meal.  The BBQ beans is something you should try before you buy especially if getting a large family pack.

Midway, Alabama – On a beautiful sunny Friday afternoon in July we headed out on a quest to experience some great barbecue at a joint located on Highway 24 near Trinity, AL. When we arrived I realized that it was in the same building as a former BBQ Restaurant that I had reviewed a few years ago, and the current owners have added a larger indoor dining area and a small patio with tables and umbrellas for al fresco dining. There is seating for about 15 or 16 people inside at tables and stools around the room. The inside is decorated in your typical Q-Joint décor with the pig theme being dominant but also includes a restored glass top Sinclair gas pump. A nice touch for sure and is probably worth more than all the other decorations combined.

It was lunch time when we arrived and business was brisk with lots of drive thru traffic and customers coming to dine in and to get orders to go. The young guy working the counter was fast, efficient and friendly, and, we asked how long they had been open and was told since August of 2010. Further conversation was hampered by the constant ding of the drive through bell and customers coming in the front door.

The menu board lists all the standard fare for a pork and chicken Q-Joint in the south, but missing was Brisket which I overheard one customer asking for. It woould have been a nice touch to have had a brisket pulled pork combo plate on the menu. As usual though I ordered the regular pork plate that comes with slaw, pickle spear and dinner roll along with two additionally sides, of which I chose the potato salad and beans. The other choices were potato chips or Mac-n-Cheese. We were not offered a choice of sauces when we ordered and but were served a watery vinegar peppery sauce that was heavier on the vinegar than pepper. The sauce is suppose to be the vinegar sauce of legendary Q-joints in Alabama but it misses it's mark on the imitation and was a little on the sour side.

Their barbecue is cooked on a Southern Pride wood over gas cooker. The Southern Pride and/or the Old Hickory units are the standard in the commercial bbq business. These cookers are capable of producing excellent bbq if the Pit Master knows his craft. Chief and Snoogie's pulled pork did have a decent flavor, but was getting a little long in the tooth in age. It was cooked a day or so before and then juiced and reheated. How do I know this you ask? Well, because after running a Q-joint for six years one knows all the tricks of the trade and this was one of those tricks. I'm not downgrading the flavor because of this though, so in my opinion it was fairly good barbecue pork.

Now here is where other folks and I may differ and that is on the sides. A good Q-joint should have killer sides such as BBQ beans, tangy mustard slaw, an above average potato salad and a good mayo based slaw. Unfortunately, Chief and Snoogie's misses the mark on all of these. Their slaw is just ground cabbage with sugar water mixed in (Yuck), the bbq bean base was pork and beans (at least use baked beans as a base) with some meat and watery pepper sauce mixed in and heated for a while. The potato salad was suffering from an overdose of sour cream and should have been sent to rehab to recover and then enrolled in the 10 step process to remain clean. It really tasted like a Food Service product that an attempt to doctor it up had been made and failed.

As a professional barbecue judge, I would give the pulled pork a rating of six and half, the sides a four since they were edible and overall ambiance, décor, and service an 8. This would then give Chief and Snoogie's an overall rating of 7.5.

The Shoals Barbecue Trail

Florence, AL -  Borrowing from an idea of a fellow roadfood foodie, We've put together "The Shoals Barbecue Trail" and beginning this week we will begin paying a visit to each of them and write a review of their merits and/or demerits.  Even though we've eaten at a majority of the Q-joints we are determined to go back and do an objective review based on the food presented that day and score them accordingly.

Our plans call for there being two Kansas City Barbecue Society (KCBS) certified Judges doing the reviews and independently scoring the establishment.  These two scores will then be combined and a total average score will be used in the review.

The BBQ (pork, chicken, ribs or brisket) will be judged using the KCBS scoring rules, with a 9 being Excellent down to a 1 (Disqualification).

8 - Very Good
7 - Above Average
6 - Average
5 - Below Average
4 - Poor
3 - Bad
2 - Inedible
1 - Disqualified

A Disqualification (1) will be given if it is discovered that any of the following occur;
  • It came out of can
  • It was cooked elsewhere and delivered in a boil bag
  • Cooked BBQ was purchased from a wholesale dealer
  • It was cooked in a Crock Pot
  • The meat was par-boiled (think ribs) prior to smoking
  • Taste like charcoal lighter fluid
The criteria that will be used to judge will not only include the food, even though that will be first and foremost, we'll also be taking into consideration sides, sauces, desserts and hushpuppies or the lack thereof.  In addition, we'll be scoring on style, cooking method, atmosphere, and friendliness of the staff. The staff of any restaurant can make or break a customer's expectations quickly but we will try to be objective and take into consideration the time of day and how busy the place is.  However, there is never an excuse for impoliteness to the customer.

The below list of fine BBQ establishments are what we could find listed on the internet.  If you know of one we've missed, just post a comment and we'll get it added in.  If any of you at home wants to play along, just print out the list, go eat and report back here.  You can send your comments to us at The Brown Bag Review at yahoo(dot)com and we'll include them in a new post.

Poplar South Deli and Grille

Florence, Alabama - When we heard there was a new deli and grille opening downtown we had our hopes up that finally someone would open a great little sandwich shop with artesian style sandwiches.  We always give a new restaurant some time to hit their stride before going and sampling their offerings and this time was no different since they have been open for a couple weeks.

We decided to visit them at lunch time and check out their menu, one of the first things you’ll notice about Poplar South is that they are located in a small building that has housed several other restaurants in the past.  The building has been refurbished both inside and out and has a very nice “Curb Appeal.” The day we visited parking was tight in front of the building and we parked across the street.  Our first impression was “Wow, this place is busy”, however, when we went inside there were only two customers present.  So, when you visit don’t be fooled by all the cars parked outside and be scared away, because there are other businesses located nearby that utilize the same parking area.

Once inside we were greeted by the young lady behind the counter and told to take our time deciding on what we wanted to order.  I chose the Angus Burger, fries and iced tea, while my wife ordered the Castle Club with a Diet Coke.

The young lady told us she would bring our cups of ice to the table and we thought it strange since the cups were sitting on the counter and we were standing in front of them.  We went ahead and got seated and then when we saw her go from behind the counter and into a storage room on the other side of the dining room and return with cups of ice for the previous customers we understood the process.  Their ice machine is not behind the counter and is inconvenient for both the staff and the customers.  We waited patiently for our drink cups which were received after the next customer’s order had been taken.
$8.79 Cheeseburger
Our food was brought out by the same young lady at the cash register and while visual appealing it was sort of underwhelming in substance.  Sort of "all show and no go" so to speak.  My Angus Burger which on the menu is advertised as “over ¼ pound”, which is a fancy way of saying a five ounce patty, was on the thin side and served on a rather nondescript bun that was listed as being corn-meal dusted bun.  The meat patty reeked of so called “frozen premium meat patty” from US Food Service, these patties are heavily seasoned with various and sundry spices both dry and liquid injected.  Whether it was 100% Angus, Hereford or just a run of the mill cow I couldn't tell you because only the company that ground it knows for sure. 

The order of fries which was priced extra were the cheap crinkle cut fries that are the staple of a lot of restaurants, but I was again hoping for something a little more upscale.  For a two dollar order of fries I kind of had hoped for freshly fried real potatoes, but alas, no winner this time.

My wife’s sandwich which again was visually appealing but also lacked substance one you tasted it.  It

was just your average food service deli styled ham and turkey that was only served with a pickle spear and it cost $8.95.


Now for some constructive criticism; If you are going to charge $7.99 for a burger, plus tack on another $.80 for a slice of cheese then by golly that burger should knock my socks off with eight (8) ounces of fresh ground beef, seasoned lightly with salt and pepper and smothered with a top shelf quality slice of cheese of my choice.  I’ve ordered and eaten $8.79 cheeseburgers before and I can tell you flat out this wasn't even in the same universe as those.  And, in most places I’ve dined, chips or fries were included in the price.  So there is lots of room for improvement in Poplar South’s burger offering. 

Having been in the restaurant business I know that food costs are very high and you have to make a profit which is totally acceptable to me, but if you charge premium prices, then deliver a premium product.  And, get some ice behind the counter so customers don’t have to wait to get their cups.

We might give Poplar South another try in the future, but with all of the food choices in Florence it may be awhile, because a mediocre $10.79 cheeseburger and fries is not an everyday event when there are places offering better values and better tasting burgers.  I do hope that Poplar South will get their act together and become a Florence success story.

Poplar South posted this announcement on their Facebook Page, dated 08/21/2013:  NEW: We have been using your industry standard crinkle fries... Well, we are out of those and we're not going to replace them. We have started making our own, which is something we wanted to do from the start. Come check them out!

UPDATE (07/21/2013):  Poplar South just announced on their Facebook page that their sandwiches will now come with a choice of plain or BBQ Chips or crinkle fries.  This is a first step improvement to success in The Brown Bag Review's opinion.
